Merry Christmas ya Hungry Animals!


Merry Christmas ya hungry animals! (See what I did there?!?)

I love Christmas and since I follow a vegan diet, I had to find a way to make a vegan-friendly caramel popcorn!

(By the way, #TheRussian loves it!)

Thus, here's my recipe!

6 cups popped popcorn (about 1/3 cup unpopped kernels)

1/2 cup packed brown sugar (if you like it super sweet, go for a full cup) 1/2 cup brown rice syrup 1/3 cup non-hydrogenated vegan butter (I used Earth Balance) 1/2 tsp baking soda 1 tsp vanilla (Want to play with flavors? Sub coconut for vanilla!)

Pop the kernels and set aside. Than add the brown sugar, etc into a sauce pan and melt on low-medium heat until super gooey. Pour mixture over popcorn and if you like a salty-sweet flavor, sprinkle 1/2 tsp of sea salt over the popcorn and bake at 250 degrees for 35-45minutes, stirring every 10 minutes.

What to make a holiday corn? Switch out the brown rice syrup for maple syrup and toss some holiday M&Ms across the top layer of the popcorn during the last 5 minutes of baking! Viola! Xmas Corn!
